而赤水河为何被称为中国白酒的母亲河呢?是什么原因让一条全长仅500公里的赤水河,流经的地域却诞生了中国60%的名酒?

 

其实,赤水河的秘密,就在于其得天独厚的酿造环境。从二郎滩到茅台镇的40公里河谷,几乎都是临河高崖,河谷处仿佛一个温暖的怀抱,其特有的温度、湿度、土壤、微生物群,使这里具备孕育优质酱酒得天独厚的优势。这也是赤水河最神秘,最动人的部分,是赤水河引以为傲的,走出这里便酿不出这好酒的核心所在。

 

另外赤水河流域紫红色的土壤中砂质和砾土含量高,土壤松散,孔隙大,渗透性强,地表水和地下水融入大地奔向赤水河时,在被层层过滤、吸收、转化中,不仅还原为清甜可口的天然山泉,还顺便带走了土质中的多种有益矿物质。这也让赤水河水成为十分理想的酿酒用水。

 

如今,赤水河仍然固守着最好的自然环境,作为长江中上游惟一一条未被开发的一级支流,至今这条河上还没有任何水利水电工程,也是干流无坝的未有化工厂污染的长江唯一支流。

 

由赤水河滋养的河谷内岸,则是茅台、郎酒等酿造顶级酱酒的米红粱生长的宝地。纯天然、无公害、无污染的绿色生态,护佑着米红粱的生长,也芬芳了赤水河的酱香。

 

有科学家曾对成品酒的成分进行分析,发现酒中的微生物多达400多种,它们中的某些种类通过一系列复杂的组合,催生110多种芳香成份,自然形成了其独特品位。

Today, the Chishui River is still the best natural environment, as the only untapped tributary of the upper and middle reaches of the Yangtze River, there are no water conservancy and hydropower projects on this river, and it is also the only tributary of the Yangtze River without dams and chemical plant pollution.

 

The inner Bank of the valley, nourished by the Chishui River, is the precious land for the growth of rice-red sorghum, which is used to make top-quality sauce such as Maotai and Langjiu. 茅台镇的炎热、少风、高温,使微生物群在此因而易于生长而不易被刮去, 大量参与酒的酿造过程。风速小,冬暖、夏热,少雨、少风的特殊小气候十分有利于酿造酒微生物的栖息和繁殖。

The special microclimate with small wind speed, warm winter and hot summer, less rain and less wind is very conducive to the habitat and reproduction of wine-making microorganisms.
